Couscous Salad

This video shows a simple and easy recipe for couscous salad and discusses various health benefits of the ingredients by an accredited practising dietitian.
  Couscous 250 Gram
  Turmeric 1 Teaspoon
  Chicken stock cube 1
  Boiling water 500 Milliliter
  Tomatoes 1 Cup (16 tbs), chopped
  Chickpeas 1⁄2 Cup (8 tbs) (canned or cooked)
  Parsley 1⁄2 Cup (8 tbs), chopped finely
  Coriander 1⁄2 Cup (8 tbs), chopped finely
  Mint 1⁄4 Cup (4 tbs), chopped finely
  Pepper To Taste
  Olive oil 2 Tablespoon
  Sugar 1 Pinch
  Lemon 1 , juiced
  Lime 1 , juiced

1. In a bowl, put couscous. Add turmeric and chicken stock cube. Pour boiling water. Stir to mix well. Cover and let it sit for a around 5 minutes or till all the water is absorbed.

2. Remove the lid from the couscous bowl and using fork fluff up the couscous.
3. Add all the ingredients into the bowl and mix well till combined.

4. In a serving bowl or plate, serve this salad as a complete meal.
