Marinated Daikon And Carrot Salad With Spring Snow Pea Shoots

Ingredients
  Daikon root 1 Medium, cut into thick matchsticks
  Carrots 2 , cut into thick matchsticks
  Toasted sesame oil 1 Tablespoon
  Lemon juice 2 Tablespoon
  Maple syrup 2 Teaspoon
  Ginger juice 1 Teaspoon (Freshly Grated Ginger Squeezed)
  Sea salt 3 Pinch
  Snow pea shoots 1⁄4 Cup (4 tbs)
  Black sesame seeds 1 Teaspoon, toasted
Directions

Put daikon and carrot matchsticks into a mixing bowl. In a separate bowl whisk sesame oil, lemon juice, maple syrup, ginger juice and sea salt. Pour dressing on top of vegetables and marinate thirty minutes or longer, tossing one or two times. Add snow pea shoots and black sesame seeds. Toss once more and serve.
