Creamy Herring Salad

Ingredients
  Salt herring 1 1⁄2 Pound
  Cooked potatoes 2 Medium
  Cooked beets 4
  Apples 4
  Minced onion 1 Tablespoon
  Vinegar 2 Tablespoon
  Sugar 1 Tablespoon
  White pepper 1⁄4 Teaspoon
  Heavy cream 1⁄2 Cup (8 tbs)
Directions

Soak herring overnight in water to cover.
Remove bone and skin from herring; cut into cubes.
Combine herring, potatoes, beets, apples, onion, vinegar, sugar and pepper; toss lightly.
Chill in refrigerator.
Fold in cream just before serving.
Garnish with sieved hard- cooked eggs, if desired.
