Smoked Fish Potato Salad
|Smoked fish||2 1⁄2 Cup (40 tbs), flaked|
|Diced cooked potatoes||2 Cup (32 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Peeled chopped cucumber||1⁄2 Cup (8 tbs)|
|Sliced ripe olives||1⁄2 Cup (8 tbs)|
|Shredded carrot||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped fresh parsley||2|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Prepared mustard||1 Tablespoon|
|Lemon juice||1 Teaspoon|
|Celery seeds||1⁄4 Teaspoon|
1. In a large bowl mix the first 8 ingredients. Keep the bowl aside.
2. Mix vinegar, pepper, celery seeds, mustard, mayonnaise, lemon juice and pepper. Add this to the fish mixture.
3. Toss slowly. Cover the salad bowl and chill.
4. Serve Smoked fish potato salad on lettuce leaves garnished with tomato wedges.
