Lobster Salad With Mayonnaise
|Cooked lobster meat||1 Cup (16 tbs)|
|Chopped celery||1 Tablespoon|
|Lettuce leaves||1 Cup (16 tbs)|
|Hard-cooked eggs||3 , sliced|
|Dry mustard||1⁄2 Teaspoon|
|Olive oil||1 1⁄2 Cup (24 tbs)|
"Cut lobster into bite-sized pieces; add celery.
Arrange on lettuce; surround with lobster claws, eggs and capers.
Mix mustard, salt, sugar and pep- per.
Add egg yolks; beat well.
Add oil gradually; beat vigorously after each addition.
Beat until stiff.
Add vinegar; blend well.
Serve over salad."
