|Fresh spinach||4 Cup (64 tbs), washed, dried & chilled|
|Fresh mushrooms||1 Cup (16 tbs), sliced|
|Radishes||4 , sliced|
|For mayonnaise substitute|
|Buttermilk||1⁄2 Cup (8 tbs) (made from skim yogurt)|
|Low fat cottage cheese||1 Cup (16 tbs)|
|Non fat yogurt||8 Ounce|
|Dill weed||1 Teaspoon|
1) FOR THE MAYONNAISE SUBSTITUTE: Take a blender container and put all the ingredients in it. Flash blend the ingredients until smooth.
2) Take a salad bowl and put all the vegetables in it.
3) Add mustard and ketchup to mayonnaise substitute and mix nicely.
4) Pour dressing over vegetables and serve immediately.
