Carrot Raisin Salad
|Raisins||1⁄4 Cup (4 tbs)|
|Cider vinegar||2 Tablespoon|
|Canned pineapple tidbits||8 Ounce, unsweetened, undrained (1 can)|
|Ground cinnamon||1 Dash|
|Ground nutmeg||1 Dash|
|Carrots||3⁄4 Pound, scraped and coarsely shredded|
1)In a small bowl mix raisins and vinegar and keep it aside for 30 minutes.
2)Drain by keeping raisins aside and reserving vinegar.
3)Drain pineapple by reserving 1/4 cup juice.
4)Mix 1/4 cup pineapple juice, reserved vinegar, cinnamon, and nutmeg.
5)Toss it with raisins, pineapple, and carrots. 6)Chill the salad.
7)Serve it chilled.
