Tahitian Chicken Salad
|Cooked chicken||3 Cup (48 tbs), chopped|
|Canned pineapple chunks||15 1⁄4 Ounce, drained (1 can)|
|Celery||1 Cup (16 tbs), sliced|
|Dry roasted peanuts||1⁄4 Cup (4 tbs)|
|Mayonnaise||1⁄3 Cup (5.33 tbs)|
|Sweet pickle relish||1 Tablespoon|
|Lettuce leaves||3 (as needed)|
1) In a bowl, mix first 4 ingredients and keep aside.
2) In another bowl, mix mayonnaise, relish, and curry powder and mix it to chicken mixture, and toss gently.
3) Serve on lettuce leaves, and garnish with grape clusters.
