Appetizer Avocado Salad
|Pepper||1⁄2 Teaspoon, freshly ground|
|Wine vinegar||2 Tablespoon|
|Olive oil||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Chives/Spring onions||1 Tablespoon, minced|
|Parsley||1 Tablespoon, minced|
|Onion juice||1 Tablespoon|
|Lettuce head||1 , shredded|
|Avocados||2 , peeled and diced|
1) In a small cup, mix together salt, pepper and sugar.
2) Stir in vinegar and oil.
3) Mix in the garlic, chives, parsley and onion juice and well together.
4) Mix in the lettuce and fold in the avocado.
5) Pile on a serving bowl, and serve at room temperature.
Do not cut the avocado until the dressing is ready or it will darken.
