Hot Potato and Broccoli Salad
|Potatoes||4 Medium, cooked, peeled & diced|
|Broccoli||2 Pound, trimmed, broken into small florets & cooked (1 bunch)|
|Vegetable oil/Salad oil||1⁄4 Cup (4 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Garlic powder||1⁄4 Teaspoon|
|Liquid hot pepper sauce||1⁄4 Teaspoon|
|Green onions||2 , sliced (scallions, with stems)|
1) Keep both cooked potatoes and broccoli hot.
2) Take a saucepan and combine all the remaining ingredients in it. Bring the mixture to a boil, stirring constantly.
3) Pour prepared dressing over vegetables and toss lightly.
4) Transfer salad to a bowl and serve immediately. It can also be served cold, if desired.
