Brown Rice And Chicken Salad With Wine Dressing

Ingredients
  Brown rice 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Cooked chicken 2 Cup (32 tbs), skinned & cubed
  Celery stalk 1 , chopped
  Parsley 1⁄4 Cup (4 tbs), chopped
  Green onions 1⁄4 Cup (4 tbs), sliced
  Dill weed 1 Teaspoon
For wine dressing
  Low fat cottage cheese 1 Cup (16 tbs)
  Wine vinegar 2 Tablespoon
  Pepper 1⁄2 Teaspoon
  Water 1⁄4 Cup (4 tbs)
  Mustard 1 1⁄2 Teaspoon
Directions

MAKING
1) Take a pan and cook rice in it along with water and salt, as per package directions. Drain and set aside.
2) Add celery, onions, parsley, dill weed and chicken to the rice.
3) FOR THE WINE DRESSING: Take a blender container and put all ingredients in it. Flash blend the ingredients by swiftly turning the motor on and off.

SERVING
4) Add as much dressing as you desire. Toss to mix nicely and serve immediately.
