Leftover Turkey And Apple Romaine Salad

Ingredients
  Romaine lettuce 1⁄2 Pound (as needed)
  Shallot 1 , sliced (as needed)
  Sliced almonds 2 Tablespoon (as needed)
  Low fat blue cheese 2 Tablespoon, grated (as needed)
  Dried cranberries 2 Tablespoon (as needed)
  Sliced apples 1 Cup (16 tbs) (as needed)
  Leftover chicken/Leftover turkey 1 Cup (16 tbs), chopped (as needed)
For vinaigrette
  Extra virgin olive oil 1 Tablespoon
  Dijon mustard 1 Tablespoon
  White wine vinegar 1 Tablespoon
  Cranberry juice 1⁄4 Cup (4 tbs) (100%)
  Pepper 1 Dash
  Salt 1 Dash
Directions

MAKING
For Vinaigrette:
1. In a bottle, combine olive oil, Dijon mustard, vinegar, cranberry juice, pepper, and salt. Shake well.
2. In a bowl, combine lettuce, shallot, sliced almonds, blue cheese, cranberries, apple, and leftover chicken/turkey. Pour vinaigrette on top and toss well.

SERVING
3. Serve and enjoy!
