Chick Pea Salad with Cumin
|Canned chickpeas||14 Ounce (400 Gram)|
|Dessert apple||1 , cored and diced|
|Currants||2 Ounce (50 Gram)|
|Spring onions||4 , trimmed and diced|
|For the dressing|
|Cumin seeds||1⁄2 Teaspoon|
|Olive oil||2 Tablespoon|
|Cider vinegar||1 Tablespoon|
|Concentrated apple juice||1 Teaspoon|
1. In a bowl add all salad ingredients and combine them together.
2. Microwave the cumin seeds for about half a minute or dry roast them in frying pan for about 2-3 minutes.
3. Combine the roasted seeds with rest of the dressing ingredients.
4. Spoon dressing into salad and mix well and serve immediately with bread, rice or pasta.
