Chilled Creamy Cauliflower Salad
|Cauliflower||1 Medium, broken into flowerets|
|Tomato||1 Medium, coarsely chopped|
|Cucumber||1 Medium, peeled and coarsely chopped|
|Green onions with tops||3|
|Celery stalk||1 , finely chopped|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Hard-cooked eggs||2 , chopped|
|Sweet pickle relish||2 Tablespoon, drained|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Tablespoon|
|Bacon slices||4 , cooked and crumbled|
1. In a saucepan cook cauliflower in a small amount of boiling water, covered for 10 minutes and drain well.
2. Toss gently adding the next 11 ingredients.
3. Cover and refrigerate several hours.
4. Spoon salad into serving container, sprinkle with bacon and serve.
