Classic Fresh Spinach Salad
|Red onion||1 Small, sliced|
|Hard-cooked eggs||3 , finely chopped|
|Bacon slices||6 , cooked and crumbled|
|For the dressing|
|Onion||1 Small, chopped|
|Vegetable oil||1 Cup (16 tbs)|
|Vinegar||1⁄3 Cup (5.33 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Prepared mustard||1 Tablespoon|
|Celery seeds||1 Teaspoon|
1 Remove the stems from the spinach.
2 Thoroughly wash the leaves in lukewarm water.
3 Pat dry using a kitchen towel.
4 Tear the leaves into bite-size pieces.
5 In a large bowl, combine spinach, onion, eggs, and bacon.
6 For the dressing: In a container of electric blender, combine all the ingredients.
7 Process well.
8 Place in the refrigerator and chill thoroughly.
9 Stir well before serving.
10 Serve with the dressing.
