Wild Rice Salad
|Wild rice||3 Ounce (75 Gram)|
|Grated carrot||4 Ounce (100 Gram)|
|Watercress||1 1⁄2 Bunch (150 gm) (1 Large Bunch)|
|For the dressing|
|Sunflower oil||15 Milliliter (1 Tablespoon)|
|Orange||1⁄2 , juiced and rind|
|Concentrated apple juice||5 Milliliter (1 Teaspoon)|
|Root ginger||1⁄2 Inch, grated (1 Centimeter)|
|Black pepper||To Taste|
1.In a pan, put 225- 300ml water and let it boil.
2.Add rice and let it simmer for 35- 40 minutes with the lid on.
3.Once done, drain.
4.Take a screw top jar and put sunflower oil, orange, apple juice, fresh root ginger, shoyu and pepper in it and shake well.
5.Drizzle the dressing on rice and mix.
6.Let the rice cool.
7.Add carrot and watercress.
8.Serve in a dish.
