Wild Rice Salad

Ingredients
  Wild rice 3 Ounce (75 Gram)
  Grated carrot 4 Ounce (100 Gram)
  Watercress 1 1⁄2 Bunch (150 gm) (1 Large Bunch)
For the dressing
  Sunflower oil 15 Milliliter (1 Tablespoon)
  Orange 1⁄2 , juiced and rind
  Concentrated apple juice 5 Milliliter (1 Teaspoon)
  Root ginger 1⁄2 Inch, grated (1 Centimeter)
  Shoyu/Salt To Taste
  Black pepper To Taste
Directions

MAKING
1.In a pan, put 225- 300ml water and let it boil.
2.Add rice and let it simmer for 35- 40 minutes with the lid on.
3.Once done, drain.
4.Take a screw top jar and put sunflower oil, orange, apple juice, fresh root ginger, shoyu and pepper in it and shake well.
5.Drizzle the dressing on rice and mix.
6.Let the rice cool.
7.Add carrot and watercress.

SERVING
8.Serve in a dish.
