1 Remove the outside lettuce leaves.
2 Wash the rest thoroughly under running water, to remove any dirt.
3 Put in a salad basket and shake out the excess water.
4 Set aside in a cool place until needed.
5 In a pan, hard-boil eggs by cooking for 10 mins.
6 When cooked, peel immediately.
7 Allow to cool in cold water, and slice.
8 Trim the spring onions, cutting off the roots and removing the outer skin.
9 Cut off the stalks to about 3 inches in length.
10 Prepare the radishes by removing the root and cutting the stalk down to about 1/2 inch in length.
11 Wash thoroughly, and put in clean water.
12 In a pan, boil water and dip tomatoes in it for 2 seconds.
13 Remove and peel off the skin using a sharp knife.
14 Slice the tomatoes.
15 Wipe the cucumber, hold it firmly on a board and slice by cutting down neatly.
16 In a bowl, grate the cheese.
17 Arrange the lettuce leaves on plates.
18 Neatly arrange the other ingredientsand pile cheese in the centre.
