Christmas Garden Salad
|Onions||2 Medium, thinly sliced|
|Green pepper||1 Large, slivered|
|Vinegar||2⁄3 Cup (10.67 tbs)|
|Salad oil||1⁄3 Cup (5.33 tbs)|
|Fresh spinach||4 Cup (64 tbs), washed|
|Pimientos||4 , cut in star shapes|
Let cauliflower stand 30 minutes in cold salted water.
Drain, rinse, break into flowerets.
Mix with onions and green pepper.
Pour combined vinegar, oil and seasonings over vegetables and toss together.
Chill in refrigerator about 30 minutes.
Just before serving break spinach leaves into salad mixture; toss lightly.
Garnish with pimiento stars.
