Marinated Campari Tomato Salad
|White wine vinegar||1 1⁄4 Cup (20 tbs)|
|Balsamic vinegar||1⁄4 Cup (4 tbs)|
|Finely chopped shallots||1⁄4 Cup (4 tbs)|
|Finely chopped chives||2 Tablespoon|
|Fresh lemon juice||2 Tablespoon|
|Ground white pepper||1⁄4 Teaspoon|
|Extra virgin olive oil||1⁄2 Tablespoon|
|Campari tomatoes||2 Pound, quartered vertically|
|Yellow tomatoes||2 , cut horizontally into 1/2 inch slices|
|Sweet bell pepper||1⁄2 , cored, seeded and cut into 1/2 inch slices (assorted)|
|English cucumber||1 , cut into 1/2 inch slices (long)|
1. In a medium sized bowl, combine all the ingredients (apart from vegetables and oil) and mix well. Add oil and whisk well till combined.
2. Add bell peppers and tomato, coat gently and cling wrap. Keep aside for 2 to 3 hours.
3. Just before serving, add cucumber and toss well.
4. Place on a presentation platter and serve with remaining dressing.
