Molded Grapefruit Salad
|Unflavored gelatin||2 Tablespoon|
|Cold water||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Grapefruit sections||1 Can (10 oz) (No. 2)|
|Grapefruit juice||1 Can (10 oz) (No. 2)|
Soften gelatin in cold water.
Place over hot water and stir until gelatin is dissolved.
Add salt and sugar and stir until dissolved.
Drain syrup from grapefruit sections, combine with grapefruit juice to make 3 cups.
Add dissolved gelatin to the 3 cups of citrus juice; chill until mixture is the consistency of unbeaten egg white.
Fold in drained grapefruit sections.
Turn into 1 1/4 quart mold.
Chill until firm.
Unmold and garnish with fresh or canned fruit.
