Warm Spinach and Rice Chicken Salad
|Chicken rice||6 Ounce (UNCLE BEN'S Brand Dishes)|
|Boneless skinless chicken breasts||8 Ounce (2 pieces)|
|Reduced fat italian salad dressing||1⁄3 Cup (5.33 tbs), divided|
|Chopped fresh spinach||4 Cup (64 tbs)|
|Plum tomatoes||2 , chopped|
|Pitted ripe olives||1⁄4 Cup (4 tbs), halved|
1 As per the package directions, prepare the rice.
2 Brush the chicken evenly with 2 teaspoons salad dressing.
3 Grill or broil for 20 to 25 minutes or the until chicken is no longer pink in center and juices run clear, turning once.
4 Diagonally slice the chicken.
5 In a bowl, combine hot cooked rice with remaining salad dressing, spinach, tomatoes and olives.
6 Stir well until the spinach is slightly wilted.
7 Place the rice mixture on individual serving plates and serve topped with sliced chicken.
