Refreshing Fruit Salad

Ingredients
  Canned fruit cocktail 1 Pound (1 can)
  Canned crushed pineapple 8 1⁄4 Ounce (1 can)
  Canned apricot halves 1 Pound (1 can)
  Banana 1 , diced
  Lemon juice 3 Tablespoon
  Grated lemon peel 1⁄2 Teaspoon
  Lemon flavor gelatin 3 Ounce
  Heavy cream 1 Cup (16 tbs), whipped
Directions

MAKING
1) Into a bowl drain the fruit cocktail, pineapple, apricots, taking care to reserve the juice
2) Into another bowl carefully toss the lemon peel and banana together
3) Into a saucepan, pour in 1 cup of the reserved fruit juice and allow to boil gently
4) Tip in the flavored gelatin and stir to dissolve
5) Add in the remaining 1/2 cup fruit juice and whip the juice together, till thick
6) Add in the fruits and fold in everything
7) Add in the whipped cream into the fruits and fold well
8) Pour the fruits into a loaf pan 9 x 5x 3 inch or a 1 quart mould
9) Keep the fruit mixture into the freezer to chill
10) Before serving, thaw the mixture partially in the refrigerator for at least 2 hours

SERVING
11) Serve the fruit salad slightly cold with some good vanilla ice cream
