Cool As A Cucumber Salad
|Cooked converted rice||4 Cup (64 tbs) (UNCLE BEN'S Brand)|
|Finely chopped seeded cucumber||1 Cup (16 tbs)|
|Plain yogurt/Sour cream||3⁄4 Cup (12 tbs)|
|Finely chopped onion||2 Tablespoon|
|Balsamic vinegar||1 Tablespoon|
|Dried dill weed||2 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
1 Rinse the hot cooked rice under cold running water to cool.
2 Drain well.
3 In a large bowl, combine cooked rice with remaining ingredients, mixing well.
4 Cover and place in the refrigerator until well chilled for about 4 hours.
5 Serve chilled.
