Cool As A Cucumber Salad

Ingredients
  Cooked converted rice 4 Cup (64 tbs) (UNCLE BEN'S Brand)
  Finely chopped seeded cucumber 1 Cup (16 tbs)
  Plain yogurt/Sour cream 3⁄4 Cup (12 tbs)
  Finely chopped onion 2 Tablespoon
  Balsamic vinegar 1 Tablespoon
  Dried dill weed 2 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

MAKING
1 Rinse the hot cooked rice under cold running water to cool.
2 Drain well.
3 In a large bowl, combine cooked rice with remaining ingredients, mixing well.
4 Cover and place in the refrigerator until well chilled for about 4 hours.

SERVING
5 Serve chilled.
