Eggplant Salad Sesame Seed Dressing
|Sesame seed dressing||1⁄2 Cup (8 tbs) (Tahini)|
|Crushed garlic||1 Tablespoon|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs) (as required)|
Prepare by mixing dressing which can be obtained from almost any imported food store, with crushed garlic and lemon juice.
Water may be added if it is too thick and blended more.
Add to eggplant mixture and chill.
Serves 8 to 10.
This can either be used as a salad and is especially good with fish or seafood.
May also be used as a party dip.
