Eggplant Salad Dressing

Ingredients
  Olive oil 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Garlic 1 Tablespoon, crushed
Directions

There are two dressings which can be used for this very tasty salad.
Combine olive oil, lemon juice and garlic, mixing thoroughly and add to eggplant mixture.
Blend again.
Chill and serve.
