Tuna Onion Salad
|Salad dressing||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Canned tuna||14 Ounce (2 cans, 7 oz each)|
|Cooked potatoes||4 Cup (64 tbs), diced|
|Celery||1⁄2 Cup (8 tbs), chopped|
|Midget sweet gherkins||12 , sliced|
1 In a bowl, combine mayonnaise and lemon juice.
2 Drain the oil from tuna into a bowl.
3 Blend with the mayonnaise mixture.
4 Flake and add the tuna.
5 Cut 4 green onions into thin crosswise slices.
6 Add in cut onions, potatoes, celery and gherkins to the tuna.
7 Toss well to mix.
8 Place in the refrigerator and chill before serving.
9 Serve on crisp lettuce leaves.
10 Garnish with carrot rings strung on green onions to add some color.
