Christie Meacham's Carrot Salad

Ingredients
  Carrots 6 Cup (96 tbs), grated
  Packed brown sugar 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Apple cider vinegar 1 Tablespoon
  Onion 1⁄2 , finely chopped
  Green pepper 1 Large, cored, seeded and finely chopped
  Pepper 1⁄2 Teaspoon, ground
  Jalapeno pepper 1 , seeded and finely chopped (optional)
  Mayonnaise 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm), minced
Directions

MAKING
1. In a bowl mix all ingredients and refrigerate overnight for best flavor.
2. Optionally add 1/2 cup grated broccoli, 1/2 cup small apple cubes, 1/2 cup raisins, or 1/2 cup pineapple chunks or crushed pineapple (drained).

SERVING
3. Spread on a serving dish and serve chilled.
