Cauliflower And Almond Salad

Ingredients
  Broad beans 8 Ounce, shelled (250 Grams)
  Cauliflower 1 Small, broken into florets
  Pimento 1 Can (10 oz), drained and chopped
  Green olives 12 , pitted and halved
  Spring onions 2 , chopped
For the dressing
  Mayonnaise 3 Tablespoon
  Lemon rind 2 Teaspoon, grated
  Lemon juice 2 Teaspoon
  Almonds 1 Tablespoon, ground
  Cayenne pepper 1 Pinch
  Salt To Taste
  Flaked almonds 1 Ounce, toasted (25 Grams)
Directions

MAKING
1) In boiling water, add the beans and blanch for 2 minutes.
2) Drain and cool under running water.
3) Drain again and peel off the skin.
4) In a salad bowl, add the beans and the other salad ingredients.
5) Combine the mayonnaise, lemon rind and juice, almonds, and cayenne pepper.
6) Fold into the salad and mix well to coat.

SERVING
7) Place in a serving dish.
8) Top with almonds and serve.
