Curried Chicken Almond Salad
Celery- 1/2 cup, finely chopped
Green Onions- 2 tablespoons, chopped
Parsley- 2 tablespoons, chopped
Mayonnaise- as needed
Curry Powder- 1 teaspoon
Almonds- 1/4 cup, finely chopped
Salt- to taste
Pepper- to taste
1) In a bowl, place together chicken, celery, onions, parsley, curry powder, almonds and season to taste.
2) Fold in the mayonnaise just to lightly coat all the ingredients.
3) Pile the chicken mixture in a deep bowl plate and garnish with parsley sprig if desired.
