Mixed Bean Salad
|Mixed dried beans||1 Cup (16 tbs) (such as aduki, red kidney, haricot etc.)|
|French dressing||6 Tablespoon|
|Ground coriander||1⁄2 Teaspoon|
|Onion||2 Ounce, peeled and cut in rings (50 gram)|
|Freshly ground black pepper||To Taste|
1 In a bowl, soak the beans overnight.
2 Thouroughly drain the beans.
3 Cook in boiling salted water for about 1 hour until tender.
4 Drain thoroughly and transfer to a large mixing bowl.
5 Pour the French dressing over the beans along with coriander while they are still warm.
6 Toss well to mix.
7 Allow to cool.
8 Add in the onion and toss with the beans.
9 Correct the seasoning.
10 Place in the refrigerator and chill.
11 Serve chilled.
