Cinnamon Apple Cheese Salad
|Sugar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Cinnamon candies||1 Cup (16 tbs)|
|Cottage cheese||1 Cup (16 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
Combine sugar; water and cinnamon candies in a saucepan.
Cook over low heat until candy is dissolved.
Pare and core the apples and place in the syrup; cover and cook very slowly until apples are tender but not broken.
Turn apples several times dur- ing cooking period so they will take on an even color.
Remove apples carefully from syrup, drain and chill thoroughly.
Mix the cottage cheese and walnuts.
Fill apple centers with cheese mixture; arrange on salad greens and serve with mayonnaise.
