Beet Salad Ring
|Canned beets||20 Ounce|
|Lemon-flavored gelatin||3 Ounce|
|Orange juice||2⁄3 Cup (10.67 tbs)|
|Minced onion||1 Teaspoon|
|Finely chopped celery||1 Cup (16 tbs)|
Drain juice from beets; measure 1 cup juice into a saucepan and bring to a boil.
Dissolve gelatin in hot beet juice.
Add remaining ingredients except celery.
When .mixture is slightly thickened fold in celery and beets.
Turn into a ring mold and chill until firm.
Unmold on crisp salad greens and fill center with any desired filling.
Serve with mayonnaise.
