Potato Salad with Caraway
|Potatoes||4 Medium, peeled, cut into 1/4 inch dice, boiled and dried|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Strained fresh lemon juice||2 Tablespoon|
|Harissa||1 Teaspoon, thinned with 1 tablespoon water|
|Caraway seed powder||1 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
1. In a heavy bottomed large skillet, heat oil till warm.
2. Add thinned harissa, caraway powder, salt and lemon juice and cook on a medium flame till it reduces, while stirring continuously.
3. Remove off flame, add boiled potatoes and toss gently till evenly coated.
4. Transfer on to a serving bowl and serve Salatit Batata (Potato Salad with caraway) warm, as an accompaniment to Couscous.
