Shrimp and Potato Salad
|Cooked shrimp||2 Cup (32 tbs)|
|Sweet pickles||6 Small|
|Tarragon vinegar||1⁄2 Cup (8 tbs)|
|Prepared mustard||2 Tablespoon|
|Finely chopped parsley||4 Tablespoon|
|Mayonnaise||1 Cup (16 tbs)|
|Diced apples||1 Cup (16 tbs)|
|Cooked peas||2 Cup (32 tbs)|
|Cooked diced potatoes||2 Cup (32 tbs)|
Combine shrimp, pickles, seasonings and vinegar and let stand for 10 minutes.
Drain off vinegar and mix with mustard, parsley and mayonnaise.
Combine shrimp, mayonnaise mixture and remaining ingredients.
Mix well and chill for 1 hour in refrigerator.
Mound on crisp salad greens in a salad bowl.
