Brown Rice Salad

Ingredients
  Brown rice 1 Cup (16 tbs)
  Oil 6 Tablespoon
  Vinegar 3 Tablespoon
  Salt To Taste
  Paprika To Taste
  Dried tarragon 1⁄2 Teaspoon
  Parsley 1⁄4 Cup (4 tbs), chopped
  Onion 1⁄4 Cup (4 tbs), finely chopped
  Chives 1⁄4 Cup (4 tbs), chopped (optional)
  Green peas/String beans 1⁄2 Cup (8 tbs), cooked
Directions

MAKING
1) In a saucepan, cook rice until just tender.
2) When still hot, add oil, vinegar, salt, paprika and tarragon to taste.
3) Let stand for sometime to cool.
4) Mix remaining vegetables and combine.
5) Chill the rice.

SERVING
6) Before serving, pile rice salad on platter in shape of a pyramid.
7) Decorate with slices of tomato and black and pimiento stuffed olives.
