Cheese and Bacon Rice Salad
|Uncooked rice||1 Cup (16 tbs)|
|Boiling water||2 Cup (32 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Bacon strips||6 , cooked crisp|
|Bacon fat||2 Tablespoon|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Chopped sweet pickles||1⁄2 Cup (8 tbs)|
|Sharp cheddar cheese||1⁄4 Pound, cut into 1/2-inch cubes|
|Thinly sliced radishes||1 Cup (16 tbs)|
|Green onions||3 , sliced|
|Green pepper||1⁄2 , chopped|
1) In a pan, cook the rice in water with salt and pepper, until tender.
2) Drain thoroughly and keep aside.
3) Crumble the bacon strips and mix with rest of the ingredients into the warm rice.
4) Serve the Cheese and Bacon Rice Salad immediately, or chilled over a bed of salad greens.
