Chicken Salad Mirepoix
|Diced cooked chicken||12 Ounce|
|Canned peas||4 Ounce, drained (1/2 Cup)|
|Canned carrots||4 Ounce, drained (1/2 Cup)|
|Wine vinegar||2 Tablespoon|
|White pepper||1⁄2 Teaspoon|
|Minced celery||2 Tablespoon|
|Lettuce/Spinach||1⁄2 Cup (8 tbs), cleaned and torn in pieces|
|Lemon chive dressing||1⁄4 Cup (4 tbs)|
1) In a bowl, mix together chicken, peas, carrots, vinegar, salt, paprika, pepper and celery.
2) Fold the chicken mixture lightly to blend together.
3) Arrange the greens equally on 2 serving plates.
4) Pile the chicken mixture over the greens and serve at room temperature.
