Chicken Salad Mirepoix

Ingredients
  Diced cooked chicken 12 Ounce
  Canned peas 4 Ounce, drained (1/2 Cup)
  Canned carrots 4 Ounce, drained (1/2 Cup)
  Wine vinegar 2 Tablespoon
  Salt To Taste
  Paprika 1⁄2 Teaspoon
  White pepper 1⁄2 Teaspoon
  Minced celery 2 Tablespoon
  Lettuce/Spinach 1⁄2 Cup (8 tbs), cleaned and torn in pieces
  Lemon chive dressing 1⁄4 Cup (4 tbs)
Directions

MAKING
1) In a bowl, mix together chicken, peas, carrots, vinegar, salt, paprika, pepper and celery.
2) Fold the chicken mixture lightly to blend together.
3) Arrange the greens equally on 2 serving plates.

SERVING
4) Pile the chicken mixture over the greens and serve at room temperature.
