Beet Surprise Salad

Ingredients
  Lemon gelatin 3 Ounce (1 Package)
  Powdered horseradish 1 Tablespoon
  Beets 1 Can (10 oz), diced or julienne
  Brown sugar 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Whole cloves 6
  Whole allspice 12
  Cinnamon piece 3 Inch
  Wine vinegar 1⁄3 Cup (5.33 tbs)
  Dry white wine/Water 2⁄3 Cup (10.67 tbs)
Directions

MAKING
1) In a large bowl, combine together the powdered horseradish and gelatin.
2) From the beets, drain the liquid into a measuring cup and add enough water to make 1 cup of the liquid.
3) Into a saucepan, pour the liquid and add brown sugar, spices and salt.
4) Heat the mixture till it starts to boil, reduce the heat and then simmer gently for about 1 minute.
5) Strain the mixture into the gelatin-horseradish mixture. Stir well till the gelatin has dissolved.
6) Add the wine, vinegar and drained beets.
7) Into a 1 ½ quart ring mold or 6 individual mold, pour the concoction.
8) Chill the concoction till it is firm.

SERVING
9) Serve the chilled Beet Surpise on a decorative serving platter. Unmold, place on shredded greens and serve as an appetizer.
