Layered Tomato-and-Cottage-Cheese Salad
|Cottage cheese||2 Cup (32 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
1. In a bowl mix cottage cheese, mayonnaise, green onion and olives and season with salt and pepper.
2. Cut a thin slice from stem ends of tomatoes, remove cores and cut each tomato into three slices.
3. Put slices together with cheese mixture.
4. Serve on lettuce, Romaine, escarole, or other salad greens, and top with remaining cheese mixture.
