Shrimp Grapefruit Salad
|Shrimps||1 Pound, cooked, shelled, and deveined|
|Minced celery||1⁄2 Cup (8 tbs)|
|Grapefruit sections||1 1⁄2 Cup (24 tbs), coarsely chopped and drained (Plus additional grapefruit sections)|
|Mayonnaise||1⁄2 Cup (8 tbs) (more to taste)|
|Shredded salad greens||1⁄2 Cup (8 tbs)|
1 In a bowl, mix shrimps, celery, grapefruit sections, and mayonnaise, and blend thoroughly.
2 In grapefruit shells, fill the mixture.
3 Using the additional grapefruit sections, decorate the shells.
4 On a bed of shredded salad greens, serve the shells.
