Exotic Shrimp Salad
|Shrimps||2 Pound, cooked and shelled|
|Water chestnuts||1 Cup (16 tbs), sliced|
|Green onions||1⁄4 Cup (4 tbs), minced|
|Celery||1⁄4 Cup (4 tbs), minced (white part only)|
|Mayonnaise||1 Cup (16 tbs)|
|Soy sauce||2 Tablespoon|
|Slivered almonds||1 Tablespoon, toasted|
1 In a bowl, mix shrimps, water chestnuts, green onions, celery, mayonnaise, curry powder, and soy sauce; toss well.
2 Prepare nests with lettuce.
3 Place the mixture in the nests and scatter some canned litchi nuts on top.
4 Sprinkle with toasted slivered almonds.
5 Serve at once.
