Celery Root Salad
|Celery root||1⁄2 Pound|
|Special oil||1⁄3 Cup (5.33 tbs)|
|Lemon juice||3 Tablespoon|
|Nonfat dry milk powder||1 Tablespoon|
|Dry mustard||1⁄4 Teaspoon|
|Grated onion||1 Teaspoon|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Minced parsley||2 Tablespoon|
1.Rub the celery roots and boil them in heated salted water for 20 minutes until soft.
2.Once done, let the roots cool.
3.Peel the roots and cut them in thin long strips.
4.Blend oil, lemon juice, mustard, onion, dry milk powder, salt and pepper.
5.Drizzle the mixture over celery root and chill for 3 hours prior to serving.
6.Serve cold with a sprinkling of parsely.
