Parmesan and Mixed Green Salad
|Torn radicchio leaves||1 Cup (16 tbs) (red chicory)|
|Torn bibb lettuce||1 Cup (16 tbs)|
|Torn boston lettuce||1 Cup (16 tbs)|
|Torn red leaf lettuce||1 Cup (16 tbs)|
|Minced shallot/Onion||1 Tablespoon|
|Balsamic vinegar/Red wine vinegar||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Granulated sugar||1⁄4 Teaspoon|
1) Combine together the lettuce and cheese in a large salad bowl.
2) In a small bowl or cup, combine together all the remaining ingredients and with a wire whisk, beat till well blended.
3) Over the salad, pour the dressing. Toss to coat and combine.
4) Serve the salad right away, at room temperature. Serve in a decorative salad bowl or on a serving platter. Makes a good appetizer or side dish.
