Curried Potato Salad
|Raisins||1⁄4 Cup (4 tbs)|
|Scallions||2 , minced|
|Sliced almonds||3 Tablespoon|
|Yogurt||1⁄2 Cup (8 tbs) (Preferably Non Fat)|
1. Cut the potatoes into 1-inch chunks.
2. Steam the potatoes for about 12 minutes or until tender and transfer to a large bowl.
3. Stir in the raisins, scallions, and almonds.
4. In a small bowl, whisk together the yogurt, chutney, and curry powder.
5. Pour over the potatoes and combine well.
6. Serve warm.
