Pear And Potato Salad

Ingredients
  Red potatoes 12 Small
  Pears 2 , thinly sliced
  Minced scallions 2 Tablespoon
  Raisins 2 Tablespoon
  Toasted chopped peanuts 2 Tablespoon
  Chopped red onion 1 Tablespoon
  Chicken stock 1⁄3 Cup (5.33 tbs)
  Canola oil 3 Tablespoon
  Vinegar 1 Tablespoon
  Orange juice concentrate 2 Teaspoon
  Ground cinnamon 1⁄8 Teaspoon
  Minced ginger 1⁄8 Teaspoon, peeled
  Ground allspice 1⁄8 Teaspoon
  Ground pepper 1⁄8 Teaspoon
Directions

MAKING
1.Cut the potato into halves or quarters.
2. Steam the potatoes for about 8 to 10 minutes, or until easily pierced with a fork and place in a large bowl.
3. Combine the pears, scallions, raisins, peanuts, and onions.
4. In a small bowl, whisk together the stock, oil, vinegar, orange juice concentrate, cinnamon, ginger, allspice, and red pepper.
5.Pour over the salad and toss it gently to combine well.

SERVING
6. Serve as an excellent appetizer.
