|Peanuts||1 Cup (16 tbs)|
|Brown sugar||1 Tablespoon|
|Anchovy paste||1 Teaspoon|
|Lime juice/Lemon juice||1⁄4 Cup (4 tbs)|
|Cabbage||1 1⁄2 Cup (24 tbs), finely shredded|
|Escarole/Other greens||1 Cup (16 tbs), shredded|
|Bamboo shoots||1 Cup (16 tbs), thinly sliced|
|Scallions||1⁄4 Cup (4 tbs), thinly sliced|
|Cucumber||1 , thinly sliced|
|Hard boiled eggs||2 , thinly sliced|
1) Make a paste of peppers and peanuts in a blender or food processor.
2) Add sugar, salt, anchovy paste and lime juice in the pepper mixture, mix well.
3) In a large bowl, toss together cabbage, escarole, bamboo shoots and dressing, until mixed well.
4) Serve in salad bowl, garnished with scallions, cucumber and eggs.
