Lean Beef With Greens And Feta

Ingredients
  Lean top round 8 Ounce
  Coarse mustard 1 Tablespoon
  Chicory 4 Cup (64 tbs), torn
  Green beans 2 Cup (32 tbs), sliced
  Sweet red pepper 1 , julienned
  Scallions 2 , minced
  Red wine vinegar 3 Tablespoon
  Olive oil 2 Tablespoon
  Beef stock 1 Tablespoon
  Dried oregano 1 Teaspoon
  Feta cheese 1 Tablespoon, crumbled
Directions

MAKING
1) Rub mustard all over the beef.
2) Grill or broil the beef for about 7 minutes on each side to cook it to medium-rare perfection. If broiling, place the beef about 5 inches from the source of heat.
3) Once cooked, allow the beef to sit for a while before slicing it.
4) In a large salad bowl, add in the chicory, green beans, red peppers and scallions.
5) In a smaller bowl, combine the red wine vinegar, olive oil, stock and oregano. Mix well.
6) Pour the dressing over the vegetable salad. Toss well.

SERVING
7) Serve the salad on individual plates. Layer the beef slices over the greens.
8) Sprinkle crumbled feta cheese on top of each.
