Ingredients
  Cottage cheese 2 Cup (32 tbs)
  Rhubarb stalks 1 Cup (16 tbs), finely chopped (Young, Red, Raw Variety)
  Carrots 1 Cup (16 tbs), coarsely grated
  Green onions with tops 1⁄4 Cup (4 tbs), chopped
  Pitted black olives 1⁄2 Cup (8 tbs) (Whole)
  Radishes 3 Tablespoon, chopped
  Oregano 1⁄4 Teaspoon, crumbled
  Mayonnaise 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
  Thick tomato slices 4
  Parsley sprigs 4
Directions

Mix first 8 ingredients together; season with salt and pepper.
Mound salad on tomato slices or stuff tomatoes with the mixture; top with parsley.
