Fresh Mushroom Salad
|Freshly squeezed lemon juice||1 1⁄4 Cup (20 tbs)|
|White mushrooms||1 Pound, wiped clean, trimmed, and thinly sliced|
|Seasoned salt||1⁄2 Teaspoon|
|Scallion whites||3 , thinly sliced|
|Chopped fresh parsley||2 Tablespoon|
|Creme fraiche||1 Cup (16 tbs)|
|Freshly ground pepper||To Taste|
In a medium mixing bowl, combine the lemon juice and the mushrooms.
Gently toss or stir.
Add the seasoned salt, the scallions, the parsley, and the creme fraiche.
Gently fold the ingredients together until well blended.
Add pepper to taste.
Serve at room temperature or chilled.
