Moulded Coconut Pineapple Salad
|Orange gelatin/Orange pineapple flavor gelatin||3 Ounce (1 Package)|
|Lemon juice||2 Tablespoon|
|Ground ginger||1⁄8 Teaspoon|
|Canned pineapple tidbits||8 Ounce, drained (1 Can)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Flaked coconut||1⁄4 Cup (4 tbs)|
|Chopped green onions||1 Tablespoon|
Prepare gelatin according to directions on package.
Add salt, lemon juice and ginger.
Chill until slightly thickened.
Fold in remaining ingredients, except greens, and spoon into 1-quart mold.
Chill 3 hours, or until firm.
Unmold on platter and garnish with greens.
Makes 4 servings.
